This I’ve Learned


I WAS THINKING…
about the sun. Is the sun brighter these days? Or is it just me?
The sunlight seems to explode when I open the shutters in the morning. Do you suppose it’s a prompt for hope and a reminder we may be another day closer to a ‘normal’ life again? Perhaps the vaccine really will be like the rainbow after the rain.
It breaks my heart to see so many people struggle. It’s time. Let’s pray that the new year really will give us our ‘normal’ life back. Although, hope gives us comfort, there is nothing that can take away the present moment. Let’s appreciate and find contentment in our life as it is today.  No matter what happens during the day, it ends with a peaceful sunset. Ralph Waldo Emerson once said, “Every sunset brings the promise of a new dawn.”

FRUIT AT IT’S BEST

Mix a little honey in your fruit salad to keep it looking fresh.
Firm kiwi can keep in fridge for a long time if they haven’t started to ripen.  When ready to use kiwi, leave at room temperature until soft.
Keep apples, pears and potatoes from turning brown, drop into lightly salted cold water. They’ll look freshly cut until ready to serve.
