how nice not to wait as long this year to see the hills transformed. It’s like the rain had a magic wand and covered the gloomy brown with a blanket of green. This usually happens closer to spring. I love it. In fact, I think I’ve changed my mind about my favorite color. It’s now green.
OVERHEARD
One thing about getting older is that we don’t lose all the other ages we’ve been.
In youth we run into difficulties; in old age difficulties run into us.
Every one desires to live long, but no one wants to be old.
I will never be over the hill. I’m too tired to climb it.
I need to retire from retirement.

You might be happier someplace else, but remember you still have to take YOU with you.

LET’S TALK ABOUT EGGS

Best not to use the egg holders on the refrigerator door. Better to keep them in their padded cartons where they can’t soak up odors from other foods.
Test an egg for freshness. Fill a cup with water and add two teaspoons of salt. Place egg in water. If it sinks, it’s still fresh. If it floats, toss it.
Want deviled eggs to have plenty of filling? Mash a little cottage cheese with yolk, then season and stuff. Your eggs will taste and look super.
For fluffy omelets and scrambled eggs, add ¼ teaspoon of cornstarch, beat well.
