I WAS THINKING…
although the holiday season is over, we are celebrating a special holiday, Martin Luther King, Jr. People cherish him because he was a true hero who wasn’t afraid to standup and speak out. And there’s no better way to celebrate than to get a day off work.

Overheard at the senior center
When I was younger, all I wanted was a nice BMW. Now I don’t care about the W.
I was always taught to respect my elders. Now I don’t have anyone to respect.
I’m retired. I was tired yesterday, and I’m tired again today.
I asked my wife if old men wear boxers or briefs? She said Depends.
We got married for better or worse. He couldn’t do better and I couldn’t do worse.

LET’S TALK ABOUT AVOCADOS

To quick-ripen avocados, put then into a brown paper bag with a tomato, then place in a warm place. The natural ethylene gas from the avocado and tomato plus the warmth will speed up the ripening.
Cut avocados turn dark when exposed to air. Sprinkle the surface with lemon or lime juice as soon as possible. If you are going to use only half, leave the pit in the unused part.
Avocados don’t ripen in the fridge. You can freeze pureed but not whole or cut.
Florida avocados are usually twice as big as California ones and have a lower calorie count. California avocados have a more nutlike flavor and a richer, creamier flesh.

We honor Martin Luther King by quoting him once a year. Perhaps we should remember his message the other 364 days by practicing compassion and empathy. Think about it!
