I WAS THINKING…
about spring. It’s here! I love the way the earth seems to refresh. The grass is greener and flowers are blooming for our attention. Well, they certainly get my attention. Many homes seem to come alive with new color growing in the yard. And there’s nothing wrong with the fields of wild flowers or the trees getting a new attire. How could we not love spring?

LET’S TALK ABOUT CUCUMBERS

Avoid buying cucumbers that are not firm and rigid. Look for ones that have not had their skins waxed. If you can’t find the unwaxed variety, it’s best to peel before eating.
For cucumber sandwiches that aren’t soggy, dry the sliced cucumber on a paper towel for 5 minutes before putting on the sandwich.
Make an attractive scalloped edge on a thinly peeled cucumber by running the tines of a fork lengthwise over the cucumber before slicing.

THIS I’VE LEARNED
Perhaps there have been times when our feelings were hurt because of what someone said to us. Or we found out that we hurt someone’s feelings and didn’t even know we did. Instead of thinking about the hurt and feeling bad, it would be wise to discuss it with the each other. That would be a peaceful, feel-good thing for everyone. Think about it.
